#GFCF Penne a la Vodka

I used gluten free pasta and almond milk and it was delicous!


  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 (28 ounce) can whole peeled tomatoes
  • 1/2 cup chopped fresh basil
  • salt and pepper to taste
  • 1/4 cup vodka
  • 1 pound gluten free penne pasta
  • 1 pint unsweetened almond milk
  1. In a large skillet over medium heat, cook garlic in olive oil until tender, 1 to 2 minutes. Stir in tomatoes, breaking up a bit with fork. Stir in basil, salt and pepper and simmer 15 minutes. Stir in vodka and cook 15 minutes more.
  2. Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  3. Stir almond milk into sauce and cook 10 minutes more. Toss with hot pasta.
