#GFCF Cranberry Cake

Super easy and delicous!

Ingredients -
3 eggs
2 cups of sugar
3/4 cup of margarine
1 teaspoon of vanilla
2 cups of GFCF flour
12 oz of fresh cranberries

Directions -
  1. Preheat oven to 350 degrees
  2. With a mixer, beat eggs and sugar for 6 minutes.  The mixture will double in size and form a ribbon if you lift the beaters out of the bowl.
  3. Add the margarine and mix for 2 more minutes
  4. Stir flour until combined
  5. Add cranberries and stir into batter
  6. Pour into greased 9x13" pan
  7. Bake 45 minutes or until a toothpick comes out clean
  8. Let it cool completely before cutting
